Artusi and its sister restaurant Spinasse are some of the best Italian food in Seattle. Their signature dish is Tajarin, a very... thin pasta with a butter and sage sauce, and everything else rotates on the menu. Some of my favorite dishes are theirmeatballs and their risottos.
